Creole Rice Casserole

  • 2 cups rice
  • 1 dash garlic powder
  • 1 Spanish onion, chopped finely
  • 1 tsp. hot pepper sauce
  • 1green pepper, chopped finely
  • 1/4 tsp. black pepper
  • 1 quart tomato juice
  • 1 tsp. salt
  • 2 tsps. salt
  • 3 tbsps. butter
  • 1/2 lb. cheddar cheese, grated
 

 

In a large frying pan, melt butter over low heat.  Add onion, green pepper, and sauté for 2-3 minutes.  Add black pepper, salt, garlic powder, hot pepper sauce , and grated cheese.  Stir until cheese is melted.  Add tomato juice and simmer for 2-3 minutes.  Wash and drain rice.   Place rice into a large ovenproof baking dish that is lightly coated with butter.   Stir in sauce, and bake at 350 degrees for approximately 1 hour, covered.   Uncover and bake for another 15 minutes.  Serve hot.
