Fruit Salsa Cookies

                                       

1 cup corn flour
1 cup whole wheat flour
1/2 cup of any Trés Tropical Fruit Salsa
2 eggs
1 tbsp. oil
1 tsp. baking soda
1 can evaporated milk
Salt to taste

Sift together flours, salt, and baking soda.  Combine eggs, milk, and salsa with a whisk.  Mix flour and egg mixtures gently with a rubber spatula.  Do not overwork the batter.  Adjust the amount of milk to get the proper consistency.

Prepare as above for the Cranberry-Orange Cornbread, but add sugar, fructose, or syrup to sweeten the mixture.  Use any one of the Trés Tropical fruit salsas, Peach, Raspberry, or Cranberry-Orange.

Drop large spoonfuls on buttered cookie sheet.  Cook at 350 degrees until done.
