It¹s from Linda Hall a graduate student at San Diego State University. This salsa is very tasty with a hint of "spice".

Spicy Peach and Kiwi Fruit Salsa

                              

4 ripe kiwi fruit, peeled and diced
1 cup Trés Tropical Peach Salsa
1/2 tsp. dried tarragon (if desired)
1/2 tsp. sugar (or none for a more tart flavor)
1 1/2 tsp. minced fresh mint leaves
1 Tbsp. lemon juice
Salt to taste
 

Combine all ingredients in a bowl and chill at least two hours before serving. Fruit salsas are most excellent when freshly made, but will keep up to 48 hours when refrigerated. The addition of the fresh kiwi fruit means that this must be refrigerated as with any open container.

 

Makes 2 to 2 ½ cups. This salsa is especially good with fish, chicken or lamb.
