This is from our good friend Richard. This recipe is simply delicious and we recommend serving it on a bed of rice, add some shredded lettuce topped with your favorite chilled and sliced fruits.  Add some hot rolls and you have a delicious meal that is sure to please all!

Mango Coconut Chicken

4 Chicken Breasts

8 oz. Concentrated Mango Juice

1 tbsp. All Seasoning

7 Chopped Tomatoes

1-2 tbsp. Trés Tropical Mango Coconut Hot Pepper Sauce

1/2 tsp. Salt
1 tbsp. Brown Sugar 4 Basil Leaves
1 tbsp. Olive Oil 1/2 Cup Shredded Coconut

Preparation:

Thoroughly coat the chicken breasts with all seasoning for one hour to marinate

Mix in a sauce pan. mango concentrate, tomatoes. basil, brown sugar, Trés Tropical Mango Coconut Hot Pepper Sauce, and salt.  Bring to a boil while stirring, cover and simmer for 5 minutes.

In large frying pan, heat olive oil. and fry chicken until well cooked. Add Mango Coconut sauce, and simmer for 3 - 4 minutes. Sprinkle lightly with shredded coconut.
