Creole
Rice Casserole
2 cups rice
1 dash garlic powder
1 Spanish onion, chopped finely
1 tsp. hot pepper sauce
1green pepper, chopped finely
1/4 tsp. black pepper
1 quart tomato juice
1 tsp. salt
2 tsps. salt
3 tbsps. butter
1/2 lb. cheddar cheese, grated

Instructions:
In a large frying pan, melt butter over low heat. Add onion, green pepper, and
sauté for 2-3 minutes. Add black pepper, salt, garlic powder,
hot pepper sauce, and grated cheese. Stir until cheese is
melted. Add tomato juice and simmer for 2-3 minutes. Wash
and drain rice. Place rice into a large ovenproof baking
dish that is lightly coated with butter. Stir in sauce,
and bake at 350 degrees for approximately 1 hour, covered. Uncover and bake for another 15 minutes. Serve hot.
